Caturdaying


 Mim had good intentions of being up early but couldn't sleep well last night, so she moved around for the morning.  She did some washing and got dressed and headed out after lunch for a walk.  It was a beautiful day with no clouds and warm.  Mum got a couple if treats at the market, a little window shopping too.  She ran into a friend on the way home which was nice.

On the way to our house you could smell smoke from a small Bush fire from across town, and see the smoke.
Chicken tacos for dinner.  Mum learnt a new tip this week.  She used to fry chicken pieces and they would come out a bit rubbery.  The tip was to to first pat dry the chicken pieces with a paper towel (she used chicken thighs). Then she cut into 1 inch /2 cm sized cubes.  Put in a bowl and put a little oil on chicken.  Season with salt and pepper.  Because mum was making tacos, she added chili, cumin, paprika and a little ground coriander.  She put aside while she chopped salsa and made guacamole.

She then heated a non stick pan.  When hot add chicken and stir till brown and cooked.  She used 4 chicken thighs and cooked it in two batches.  No oil needed and it was her best cooked moist and tasty chicken.  She made a similar stir fry during the week using Chinese spices which was yum.

Me - well I ate about a teaspoon of raw chicken.  That was enough for me.

    tenderise it..or a wooden hammer for lager
    pieces, like steak, or chops, l like most
    of my meats flash~fried..crispy on the
    outside, raw on the inside..!

  2. So interesting. Frightening to think of fire in Wellington. Th Bush is so green.
    Loved the taco photos. Never tried them but they look delicious . I’ve been watching two fat ladies.i find Jennifer so amusing with all her stories and her deep generous voice . She loves to burst into song at the most surprising moments. I find it sad she is no longer alive.
    More pics please when mum does wonderful meals. 😋

    1. Clarissa Dickson Wright and Jennifer Paterson were an amazing
      couple..I met them back in 1998..and, yes, Jennifer was prone
      to burst into song..at any time!
      Jennifer died of lung cancer on 10th August 1999, the day before
      she died, she asked Clarissa to bring her a tin of caviar
      but when Clarissa arrived at the hospital, Paterson had
      already died...after the funeral, she ate the caviar as a tribute
      to her friend..sad but true..!
      Clarissa died 15th March 2014.
