Feasting On Friday

 Yippee mum sure is glad it is Friday.  Work was longish, and  even though she worked with a good team, she was glad to head off home with me.  So after a bit of couch surfing, she went to the kitchen to cook up some dinner.  She turned up her new fave CD - Red by Taylor Swift - don't judge, and got a big diet soda.
Tonight she made lemon chicken rissotto.  15 minutes, five ingredients and one pot - easy peasy, and she has enough left over for three more meals.  Did you spot the salad - yes it is the from the same big bag of salad mix that mum bought.  It has done three dinners and three salad lunches so far, and enough for  a feed tomorrow.

  3. Oh! That sounds YUMMY! Recipe? I probably have everything to make it. I even have some new Meyer lemons to use, and I think the very same salad blend! After yesterday's beef dinner, I need something much lighter today!

    Is the weather fine enough for dining al fresco? That would make the meal just perfect.

  9. looking at the risotto i'm thinking it's been far too long since. without meat of course, but i'm thinking mushrooms or beetroot would be nice. as they usually are. love the salad too, looks fresh and natural. happy weekend!

    (and thank you for kind comments now and then, i'm rubbish at visiting blogs these days, but i'm thining a lot about the blogs i used to read regularly, if that counts?)
