Lady Lunch

Mum is on the afternoon shift again today.  5 down and just 3 to go.  She tries to make her own food to take, to save the pennies and this week is trying to clear out the fridge before buying more groceries.   She had a couple of large spuds to use up - so decided to make baked potatoes.

Super easy.  She microwaved them for 15 minutes then put them in the oven for a 1/2 hour.  She chopped 1 small onion + 1 small zucchini + 1/2 red pepper.  She fried these in a small bit of oil.  She then scooped out the inside of the potatoes and added the cooked veg, 2 slices of ham chopped up small, butter,  2 chopped up slices Swiss cheese, some defrosted peas and corn and salt and pepper.  All mixed up and put back into the potatoes and back in the oven for a further 10 minutes.

So a tasty lunch for her and supper for the next couple of days.  Me - well I am going to stick to the feast.

  4. Poppy how happy to have mum home. You will be all gooey and cuddly now for a couple of days to make sure she stays home.
    Love the recipe. Should have jolly well looked earlier eh Mum bean. Anyway had a good grocery delivery today and know what we will have for dinner tomorrow night. Minus a couple of ingredients but that will do beautifully. I,m glad mums home too poppy.xxx

  5. Mmmm, those look yummy, at least to our biped! Your mum always makes such tasty food, Poppy. We're with you, though, we'll stick to our canned kitty food. :-)
